About the farm

Finca Los Pirineos sits in the Tecapa–Chinameca mountain range in Usulután, eastern El Salvador. The farm has been associated with the Baraona family for well over a century and is now managed by Diego Baraona. The farm is particularly known for experimentation with coffee varieties and processing methods.

Los Pirineos maintains a large collection of coffee genetics, with sources documenting 70–80+ varieties on the property. Pacamara is one of the farm's important varieties.

Variety — Pacamara

Pacamara is a distinctive Salvadoran variety resulting from the crossing of Pacas × Maragogipe. It is famous in specialty coffee for its large bean size and potential for highly aromatic, complex cups.

At Los Pirineos, Pacamara is one of the varieties associated with the farm's experimental and specialty production.

Processing — Carbonic Maceration Natural

This is the particularly interesting part of the lot.

In carbonic maceration, whole coffee cherries are placed in a controlled environment where CO₂ is used to create a low-oxygen/anaerobic atmosphere. At Los Pirineos, documented processing involves ripe cherries being selected, floated, fermented in CO₂-flushed tanks, and subsequently dried on raised beds.

Los Pirineos has been experimenting with carbonic-maceration processing since 2017, including work with Project Origin.
